Succulent marinated chicken in a rich, aromatic tomato and cream sauce.

Arguably the most popular curry in the world. Tikka masala is a celebration of layered spices — char-grilled marinated chicken in a silky tomato and cream sauce. It gets even better the next day.

Ingredients

Mix marinade; coat chicken and refrigerate 4+ hours

Grill or sear marinated chicken until charred; set aside

Fry sliced onions in butter 15 minutes until deep golden

Add garlic and ginger paste; cook 2 minutes

Add all spices; fry 1 minute

Pour in tomatoes; simmer 20 minutes until oil separates

Blend sauce smooth if desired

Add grilled chicken and cream; simmer 10 minutes

Season with salt; stir in a knob of butter off heat

Serve with coriander and warm naan
