A great Caesar salad lives or dies by its dressing. This from-scratch version with anchovy, egg yolk, garlic, and parmesan is the real deal — clings to every leaf perfectly.

Make croutons: tear sourdough into chunks, toss in oil and garlic powder, bake 200C 12 minutes

Crush anchovies and garlic into a paste

Whisk in egg yolk, mustard, and lemon juice

Slowly drizzle in olive oil while whisking to emulsify

Stir in grated parmesan; season with black pepper
6
Toss romaine in dressing
7
Add croutons and most of the parmesan
8
Serve with extra parmesan shavings
